Ubriaco Di Raboso, a cow’s milk cheese from the Treviso region of Italy. It is a semi-hard cheese made from raw cow’s milk that is matured for six months and then soaked in Raboso grape must (skins) for weeks to develop its flavor, aroma and color. Very similar to Ubriaco Prosecco which is aged on Prosecco grape skins, this cheese has a light reddish color and a fruity flavor with a spicy finish. Pair it with your favorite Merlot or Cabernet Sauvignon and an India Pale Ale.
