Aziende Agricole Livon’s Chardonnay Collio DOC has an intense pale straw yellow color with greenish reflections in the glass. Elegant and fascinating, the nose reveals a fragrant bouquet with aromas of golden delicious apples, ripe peach, followed by bread crust and hazelnuts. On the palate, Collio de Livon’s Chardonnay is round and velvety, fresh and well-structured, dry, with a long and fruity finish.
Vinification of the Chardonnay of Collio AOC of Livon
The grapes of this fine single varietal Chardonnay grow in the vineyards of the municipality of Dolegna del Collio, on clay loam soils of oceanic origin. The grapes are harvested exclusively by hand, cold macerated in the horizontal press for eight hours and the must is clarified by natural decanting. Subsequent fermentation takes place entirely in stainless steel tanks at a controlled temperature of 18°C and remains in the same containers for five months to mature at a constant temperature. After bottling, the wine remains in the bottle for some time before being released for sale. This Collio Chardonnay can be kept for 4 to 5 years.
Gastronomic recommendations for Chardonnay Collio de Livon
Serve this elegant white wine from Friuli as a second wine after an aperitif, with risotto with young vegetables and herbs, or with delicate fish dishes. After some aging, it also pairs well with more flavorful pasta or rice dishes and with white meats and poultry. It is recommended to be served between 11° and 12°C.
