Castelmagno is a broken paste cheese because the curd is broken and pressed twice by hand. The rind is a little rough depending on the seasoning, which in our case is 6 months. The paste is ivory white and the longer it matures, the more compact and friable its texture becomes. It is considered blue because mold, present in the cellars, sometimes penetrates the rind and forms fine blue streaks that give the cheese a more pungent flavor. It is used as an after-dinner cheese or for first courses such as the typical risotto with radicchio and Castelmagno.
